A Stitch in Time...


Whew, what a whirlwind of a week! First thing Monday morning, little man Jake falls and gashed his chin. Off to the ER, we go! For five hours, we sat and entertained a busy little boy. Finally, the nurses arrived and wrapped my baby up in a sheet as tight as she can. Next thing you know we are holding Jake down and my baby suddenly becomes The Incredible Hulk trying with all his might to break free of his wraps. Poor Daddy could not even look. After everything was done, 5 stitches, poor baby! 
All better!

The next day, Skylar, the dog, had surgery to remove a mass on her cheek. She came home with 11 stitches.


Jake had his Easter party at daycare on Wednesday, which also happened to be my day to bring snacks. So, I found delish idea for Peep Rice Krispie Treats.





They loved them.

Of course, on Wednesday, I catch some head cold. Hopefully, that was what was with my headaches. But mom and dad came up on Thursday. So, to celebrate her birthday which was on Monday, we had Carraba's Carry Out and I made one of my famous carrot cakes.


I never measure vanilla! You can never have too much vanilla!

Ingredients

  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans
  •  
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
  3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

And the not so good days...


Ow! I have been having the worst headaches lately. Bordering between migraines and sinus headaches. Pain behind my eyes and extreme tenseness in the neck. Like I said, Ow! Hopefully, it is nothing simple advils or alleves can't fix.

On a brighter note, weekend was good.

Made some Chicken Cacciatore. It was so delicious! I always dreaded making this dish. I think the whole tomato sauces with chicken thing just creeps me out. So glad I tried it. A whole new meal selection for the Rib Crib.

Chicken Cacciatore

Ingredients

  • 4 chicken thighs
  • 2 chicken breasts with skin and backbone, halved crosswise
  • 2 teaspoons salt, plus more to taste
  • 1 teaspoon freshly ground black pepper, plus more to taste
  • 1/2 cup all purpose flour, for dredging
  • 3 tablespoons olive oil
  • 1 large red bell pepper, chopped
  • 1 onion, chopped
  • 3 garlic cloves, finely chopped
  • 3/4 cup dry white wine
  • 1 ( 28-ounce) can diced tomatoes with juice
  • 3/4 cup reduced-sodium chicken broth
  • 3 tablespoons drained capers
  • 1 1/2 teaspoons dried oregano leaves
  • 1/4 cup coarsely chopped fresh basil leaves

Directions

Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.

In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.

Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.

Spent the weekend tidying up here and there, going to a picnic, going to a birthday party and getting caught up on some work. Had some many yummy ideas to bring to the picnic but since I have been doing the whole Atkins thing to lose a few pounds before a wedding, I had bring something Atkins friendly. I wished I could have brought deviled eggs but there was no way I was going to peel all those eggs. So I made a broccoli salad made with splenda and brought sausage & cheeses. I also brought those Wal-Mart frosted cookies (can't stand them; so less temptation). I did have a couple teeny jelly beans though.



 The birthday party was fun. It is amazing to discover how many people are affected by adoption in one way or another. We were introduced to a couple who had a son (named Jake) and daughter who they adopted. It was awesome swapping our adoption stories and learning about our similar backgrounds and experiences. And of course, the children looked just like the parents. She did tell me when they put there profile in for their son, they set up a nursery right away. I am not sure I can look everyday at empty nursery.

Getting there...


Today was a fairly low-key day. A relatively smooth day at work which ended early. Yay! Stopped in an incredible store, new to Lakeland called Deal$, basically an oversized Dollar Store. My girlfriend in Palm Beach had told she bought her gumball machine party favors at one by her. Apparently, we now have one in Lakeland. Found some great easter basket fillers and little coloring books for only $1. Not an everyday store but great for little presents and prizes for little ones. Not only did I find this, I also discovered a Hobby Lobby is being built here. Never been but according to my fellow bloggers it is better than Michaels and Joann's.

Took care of major hair issues, looks fabulous! Tons of curls! See what a good cut will do. While having my hair done, my stylist was talking about a cupcake store and her love of cupcakes. I had to laugh since my reading material was a cupcake magazine which I whipped out for her. She then informed me of a cake decorating class in Lakeland. She told me she'd give me the info if I promised not to go and show off my mad cake decorating skills, I promised her I was clueless in that department! Ironic, isn't it! I can cook and bake about anything but no decorating. So, of course, I signed up when I got home. :)

Made a delicious dinner tonight. My mouth is still watering thinking about it! It was Baked Shrimp Scampi from Ina Garten Barefoot Contessa, who is my absolute fave. Just some pics of the process and results.

Baby Steps


Make it short! Spent the day at the beach with my two men. Amazing day! I loved sitting back relaxing and watching my son play in the water. My son! Still after almost two years, it does not even seem real. Sometimes, I just watch in admiration while he plays with a smile on my face. I watch him run past me, like watching a cute child at the mall, then he yells, "Mama!" and reality slaps me in the face! He is MINE! Whatever did I do to deserve such a precious child. I feel it was my Aunt Patti and my Nannie in heaven, who sent him to me since they both know what difficulties we had. Of course, I am forever grateful to his birth mother who chose us out of so many wonderful couples. I love my Jake!


Curried Chicken Salad

Okay, no more sappiness, I promise. Back to the beach! We went to Fort De Soto and had a great picinic. I made Curried Chicken Salad and brought hummus, potato salad, and fruit salad. Did not care for the Curried Chicken Salad at all. Does not help that I am not a fan of curry, LOL. Jake chowed on some pretzels, bananas, yogurt, and most the fruit salad (loves fruit).

For dinner, I made Salsa Chicken Rice Casserole. Yummy! Even Jake liked this! I did change a few things mainly the method of cooking.

 After putting the little man to bed, I had to get on the treadmill. It is time to make some major lifestyle changes. Because of my plantar fasciitis, I was only able to walk 1.5 miles today but baby steps...

Spring Cleaning





Had the day off due to a slight misunderstanding, no problems, we decided to go the water park at Disney as soon as Roberto got home from work. However, yet again, mother nature reared her ugly head. I was lucky enough to sleep in until 9am. That's when I heard the rain, ugh :( ! Then I heard pang, pang, pang on the lanai's roof. Yup, hail! Tons of it! Looked like somebody dumped thousands of white pellets from a plane.
Told you!


Since the water park was out, I decided it was time for a little spring cleaning. And I went to town! Even cleaned the refrigerator out, not just throwing out food but took out all the bins and shelves and washed with bleach. Whoa, Lisa!

Now, I am sitting back watching Brazilian soap opera trying to pick up some more Portuguese. I am not sure if this is the Portuguese his family wants me to know ;)

Etsy! Everyone is telling me about etsy like it is a secret or something new. I'll be talking to someone and they will lower their voices, "You should check out this site called Etsy." I am always expecting them to follow up with, "Shhh, don't tell anyone!" Well, I <3 Etsy and I do not keep it a secret. In fact, I am going to list my Top Ten Etsy Items for Sale!!!
